Day 18: IT’S GRAN’S PIE!
So we know the holiday season is in full swing and everything is supposed to be merry and jolly but sometimes it all gets a little too much. It’s also the time of year when it is just that little bit more noticeable who isn’t at the table anymore and all you want to do is just eat an entire pie… by yourself… we’re saying go right ahead.
3 whole eggs
1 Cup (235ml) of corn syrup
1 tsp vanilla extract
1 ¼ Cup (125g) of pecan halves
2/3 Cup (150g) of sugar
1/3 Cup (75g) of butter, melted
Pie crust of your choosing, prebaked/unbaked.
A handful of pecans to decorate.
Preheat oven to 350°F or 175°C.
Beat eggs lightly with an electric mixer or fork until combined. Stir in corn syrup, sugar, butter and vanilla extract. Stir well.
Add in pecan halves and pour filling into crust. Decorate the top with whole pecans.
Bake preheated oven, for 45 minutes or until knife comes out clean.
Tip: Cover edge of pie crust with aluminum foil for first 25 minutes of bake time, then remove for remaining 20 minutes, to prevent the crust from burning.
